Scrumptious Saturday: Veggie Stuffed Bell Peppers

Hi friends! This week, we're featuring a hearty, vegetarian stuffed bell pepper recipe that you must try! It's a delicious, healthy and light lunch or dinner. Depending on how hungry you are, one whole stuffed bell pepper per person should do the trick (that's two servings). 

Here's a recipe for one pepper...
1 table spoon olive oil
1/2 cup rice
1 bell peppers, cut in half & hollow
1/4 cup onions
1 tbsp taco seasoning
1/2 cup black beans
1/4 cup sweet golden corn
1/2 cup salsa
handful of your fav shredded cheese

Prep time: 15 minutes
Cook time: 10 minutes

Prep: Preheat the oven to 450 degrees. Cook your rice, chop onions, & sauté onion. 
Meanwhile, brush olive oil onto your bell peppers and throw them in the oven until your rice is done.

After your rice & onions are done, mix rice, onions, corn, black beans, taco seasoning, and salsa into one bowl. 

Then, take your bell peppers out from the oven and spoon the mixture into the bell pepper halves. Bake for 10 min.
Sprinkle on your favorite cheese on top and place back into the oven until cheese is melted.
Sprinkle cilantro and enjoy!
