Hi friends! This week, we're featuring a hearty, vegetarian stuffed bell pepper recipe that you must try! It's a delicious, healthy and light lunch or dinner. Depending on how hungry you are, one whole stuffed bell pepper per person should do the trick (that's two servings).
Here's a recipe for one pepper...
*Ingredients*
1 table spoon olive oil
1/2 cup rice
1 bell peppers, cut in half & hollow
1/4 cup onions
1 tbsp taco seasoning
1/2 cup black beans
1/4 cup sweet golden corn
1/2 cup salsa
handful of your fav shredded cheese
cilantro
Prep time: 15 minutes
Cook time: 10 minutes
Prep: Preheat the oven to 450 degrees. Cook your rice, chop onions, & sauté onion.

Meanwhile, brush olive oil onto your bell peppers and throw them in the oven until your rice is done. |
After your rice & onions are done, mix rice, onions, corn, black beans, taco seasoning, and salsa into one bowl. |
Then, take your bell peppers out from the oven and spoon the mixture into the bell pepper halves. Bake for 10 min. |

Sprinkle cilantro and enjoy! |
